This Haenuki grows in Yamagata Prefecture, a region with an environment favorable to its cultivation. The rice fields extend on the foothills of the mountains with an oceanic influence to soften the harshness of the climate. The forest provides its nutrients through groundwater and rivers to nourish the rice plants. All of this allows for the production of high-quality grains.

Usage:
Haenuki rice is ideally suited for sushi, maki, and onigiri. It easily competes with Italian rice for risotto.
The rice should be rinsed several times before cooking, until the water is clear. For one volume of rice, use 1.2 volumes of water. Once the water is absorbed, wait 10 minutes, then fluff the rice by mixing it. After that, trust your skills or your favorite recipe for preparing sushi rice.
