Sort of pickles, shibazuke is primarily a technique; it involves soaking pieces of vegetables (often cucumbers) in a brine enriched with herbs and spices. A thorough pickling process aimed at creating harmony between flavors, without losing any of the freshness and crunch of the vegetables. Vegetables can be found in this melting-pot version produced by the company Kyozuke: cucumbers, of course, but also chopped radishes and eggplants, all enhanced by the blend of shiso and ginger, in a marinade that is as delicious as it is explosive.
