Dried Wakame

This dried wakame is produced by the company Yamashita Shoten, based in Itoshima (north coast of Kyūshū Island). The Sea of Japan is generous in edible seaweeds; more than a hundred varieties can be harvested along its coast, and wakame, a tender brown seaweed, is among the most popular (and the most consumed in the world). This dried wakame is used rehydrated and seasoned, as an accompaniment to salads, pickled vegetables, and soups (of course, miso soup!).
