Gluten Free Sweet Tamari Soy Sauce
Deliciously addictive, this sweet "tamari" soy sauce (meaning "old-fashioned" or "traditional") is an exception: denser than classic soy sauce, it also has a more pronounced flavor. The result of slow maturation, which allows the soy proteins to express all their umami. The perfect balance between salt (less present) and sugar (added) gives this tamari soy sauce a beautiful length on the palate. More difficult to produce, it is not found everywhere. It is thanks to the Yamami Jyozo company, established since the 1950s in Aichi Prefecture (Nagoya region), that we have this version appreciated by chefs and restaurateurs.
Naturally rich in umami, it can be used in many sauces (demi-glace, wine, yakiniku...), making it an interesting product to have in the kitchen. A gluten-free product (it does not contain wheat, unlike non-tamari soy sauce).
Usage: Sweet tamari soy sauce pairs very classically with raw fish (sushi and sashimi), but it also withstands cooking well: incorporate it into your sauces, drizzle it over your stir-fries, or brush it on your poultry for a lacquered finish that is very Asian.
Storage: Glass bottle to be kept in a cool, dry place, away from light, and in the refrigerator after opening.
