Kuroushi Aoyama Junmai Ginjo Sake
On paper, the sake "Aoyama" or "Hekizan" (two different readings of the name) is an ultra-fruity sake: 50% polishing, yamadanishiki rice... All the characteristics of daiginjo are present. However, the Nate Shuzoten brewery chooses to present it as a ginjo. This is easily understood during tasting: the Hekizan is lively and vegetal, fresh and dry, complex, with notes of pear and a finish of just-cooked rice. Highly recommendable with traditional Japanese cuisine: sashimi, root vegetables, cold noodles...
Storage: This sake should be kept cool, between 2 and 5°C. As with all sakes, we recommend protecting it from light. For prolonged storage, it is better to keep the bottle upright in a dark place. Laying the bottle down puts the sake in contact with the cork, which can be detrimental.
Ingredients: Water, rice, koji rice. (Alcohol: 15.5%)
Shelf life: Before opening and under good conditions (as stated above), you can keep this sake for years. After opening, it all comes down to taste: the "classic" shelf life is about ten days in the refrigerator, but some enthusiasts let their bottles evolve in the cool for three to four weeks, or even longer. It all depends on your taste for oxidized sakes.
Serve chilled: We recommend serving this sake chilled, between 8 and 10°C. A wine glass will allow you to better appreciate its bouquet, but a sake cup will more broadly reveal its texture. No worries, it will be excellent in either case.
